A night in which we didn't have too much energy to make an interesting dinner is what brought us to this recipe. In attempts to spice up an ordinary roasted chicken breast one night, I decided to throw cumin into my go-to chicken seasonings. Cumin, a prominent flavor found in taco seasoning and hummus, also does a wonderful job at enhancing chicken. The warm flavors of cumin really brought this dish to life, and created something new and delicious out of an old recipe.
Ingredients:
- 2 chicken breasts
- 2 tablespoons olive oil
- 1 tsp each of cumin, garlic powder, and onion powder.
- Preheat the oven to roast at 400.
- Rinse chicken under cold water, and place in a pyrex dish.
- Pour olive oil over chicken, and sprinkle with seasonings.
- Roast at 400 for 25-30 minutes.
- Serve.
We paired this chicken with roasted broccoli, but almost any vegetable would be a great accompaniment to it. This is a great recipe when you're short on time (or inspiration), but don't want to compromise on quality.

This is exactly the kind of meal that I love for nights just like you describe - when I'm not feeling motivated but still want a quality dinner. Sometimes I forget that one of the best ways to have a meal like that is to just season a cut of meat. And cumin is one of my favorite spices, so this sounds delicious to me!

ReplyDeleteLove that you used only a few spices... I just made a chicken recipe last night focused on nutmeg. The spice brought out the characteristics of the almond and parmesan coating. Very fun!
